NeuroCook: Lose Some Weight Edition

For more than two weeks now, the environment in the office has been different. The normal breakfast deliveries, batch by batch lunch chats, afternoon sweets and nonstop coffee drips were put to a halt. In an enviroment of highly competitive, creative and result driven people, it only takes a poster to turn everyone into battle mode. Even if it's just a weight loss challenge before we set some gay, ecstatic fire in the island of Boracay.





And since I can use some drive to at least achieve beach-decent body (boy how I failed in my trip last month!), I decided to join. If I don't get the money, at least I ditched the fats! But this post will not chronicle my love-hate relationship with oatmeal and whole grain cereals, but instead, will feature my love for whipping some good food in my own kitchen!


Today's Healthy Meal: Open faced Tuna Sandwich with Egg & Potato Salad

What you need:

Tuna Open-Faced Sandwich
Whole grain bread
Light Mayonnaise or Olive Mayonnaise
Light White Meat Tuna
Chopped Celery
Chopped Pickles
White Pepper
Salt

Potato Salad
Potato
Light Mayonnaise or Olive Mayonnaise
Eggs
Pickles
Pineapple Tidbits
White Pepper
Salt

STEPS TO FOLLOW:


Boil potatoes and eggs for 10 minutes or until potatoes are tender but not too mushy


Peel potatoes and eggs and chop into cubes. Place eggs and potatoes in one mixing bowl.

Add some chopped onions, celery, pineapple tidbits and pickels
Toss some light mayo or olive mayo and mix until potatoes and eggs are fully coated 
Dash white pepper and salt to taste
Chill for at least an hour



On another mixing bowl, mix light white meat tuna with light mayo or olive mayo
Add some chopped onions and celery
For a sweeter taste, you may add pickles and pineapple
Salt and pepper to taste

Heat whole wheat bread in a toaster for a few minutes
Spread some tuna mixture and scoop potato and egg salad on the side
Add lettuce if desired
Smile and start digging!

Presto! You have a healthier alternative to fastfood takeout or buffet dinner. Just make sure to go slow and not overtrust the word "light" in mayonnaise. Olive mayo is the healthier, albeit much much expensive alternative and is not widely available. If you're not on a diet, grating cheese over your potato and egg salad will add more flavor, too!

So far I've lost 4 pounds by avoiding white rice and sticking to very light dinner. One thing I haven't achieved though is to pair the diet with at least running as exercise. One step at a time, perhaps.

  1. Hey! Whatever it takes! I fell out off the diet bandwagon this past weekend since it was a holiday weekend and I had a friend in town. I gained back 2 pounds but I'm still down overall and I'm back on the wagon. I guess these things happen; there will always be setbacks. Good luck!

  2. wow! Congrats on losing 4 lbs! it's a good start and its really important to eat healthy (nagsalita yung mahilig sa junkfood) hahahah :) Yay for healthy living !
